Hummus

Staple #1: Hummus

Over the next couple of weeks, I am going to post seven staple recipes. These are recipes that I always go back to and have made year after year. Some of them are family recipes, some of them I found on other blogs or cooking magazines and some are my own. I hope you enjoy them as much I do.

The recipe for today is hummus.

We eat a lot of hummus. It’s a great snack with pita chips and vegetables. I put it on sandwiches and use it in dinner recipes. It’s also an easy appetizer to bring to a friend’s house for dinner. My husband does not do a lot of cooking but this is one of the recipes he excels at. It’s simple and delicious. Enjoy!

Hummus

Prep Time: 15 minutes
Yields: 1 1/2 cups

Ingredients

1 can of chickpeas, drained, 2 tablespoon of liquid reserved

Juice of 1/2 lemon

1 clove garlic, minced

1 tablespoon tahini

3 tablespoons olive oil

Salt, to taste

Cayenne pepper, to taste

 

Instructions

Add all of the ingredients except the olive oil to a blender or food processor. Process until smooth. In a slow stream, add the olive oil to emulsify. If it is too thick, add additional water or olive oil until it is the desired consistency. Add salt and cayenne pepper, to taste.
